Tim and Carol Cochran first thought Horse and Dragon Brewing Co. in Fort Collins, Colorado, would be their retirement pet project -- but after they got knee deep into planning and realized how much of their lives they'd dedicate to operating a craft brewery, they realized they're glad they didn't wait.
